guys, stuffed peppers are seriously SO easy and SO yummy!! there are so many different ways you can make them. i honestly don’t think you can actually mess them up! ⁣ ingredients:⁣ • 4 bell peppers ⁣ • 1 cup uncooked rice ⁣ • 1 can black beans ⁣ • 1 can corn⁣ • 1 can green chillis ⁣ • 1 onion ⁣ • 1 lb ground beef ⁣ • taco seasoning ⁣ • minced garlic ⁣ • 2 c shredded cheese ⁣ directions:⁣ • preheat oven to 350°⁣ • cook your rice according to the package (i just use instant microwave rice — works just the same)⁣ • in a pan brown your ground beef, with onions, two spoonfuls of minced garlic and taco seasoning ⁣ • drain and rinse your black beans and corn⁣ • in a large bowl mix together cooked ground beef mixture, cooked rice, corn, black beans, green chillis and half your cheese ⁣ • cut your peppers in half long ways and clean out the seeds and stem⁣ • lay peppers in a 9x13 pan and stuff with your filling ⁣ • top peppers with the rest of your cheese and cover with foil⁣ • bake for 40 minutes (30 with foil and 10 without) ⁣ to make this vegetarian, simply leave out the meat! you don’t need it! ⁣ hacks/tips: i always cut my peppers long ways instead of just cutting the stem out because i really don’t need a whole bell pepper in one sitting. i keep a jar of taco seasoning on hand! so easy to just throw on random things you’re cooking. it’s also cheaper and less wasteful than buying a new package every single time! i use “flavored” cheese. this time it was jalepeno and habanero. it adds the perfect amount of spice!! ⁣ (i know there’s only 3 peppers in this pic - use 4 or you’ll have way too much stuffing!!)⁣ #homecooking #cookingonabuget #stuffedpeppers #mealprep #yummy
