so recently i have been straight up addicted to arugula. it can have a pretty strong flavor, but if you mix it with the right flavors it is amazing!!!   i really wanted arugula and noodles so i googled that but didn’t come up with much. i took some random recipes & mixed them together to make this random concoction of deliciousness!!   vegan & vegetarian friends: the cheese was not needed, i just have a cheese issue. the meat was also not needed i just needed to use it up! with the beans, noodles & leafage - there is plenty of nutrients and protein to switch it up a bit & enjoy!   storage note: so the arugula didn’t get too soggy, i made five containers of arugula and kept the noodle mixture in a big container. then every morning i just scooped some noodles onto my leaves!   ingredients: • one box of noodles  • one jar of pesto (8oz i think) • 2 cans of cannellini beans (couldn’t figure out how to spell this...google it...frickin kidney beans you guys)  • 1/4 balsamic vinegar  • one or two chicken breasts??? (i just had some i really needed to use up. i really don’t think this recipe needs meat)  •shredded parmesan cheese   directions:  • boil your noddles, then drain them  • just cook the chicken in a skillet w some olive oil, salt & pepper! then cube it up  • in a big bowl mix pesto sauce & vinegar  • drain your beans  • add beans, pasta & chicken. mix well.  • sprinkle some cheese on and mix it in!  • add to arugula morning of!   #homecooking #mealprep #arugula #healthyeating #cookingonabudget
