somehow this posted with ZERO of my blogginess. i’m not going to try and rewrite it all because it was pretty passionate... :( this recipe is a quinoa brussel sprout concoction and it is AMAZING!! i was not expecting this to be as delish as it was. it could def be served as a side dish but i split it all up into tupperware and ate it for lunch!

ingredients:⠀ •4 c brussel sprouts – halved ⠀ •1 red onion – chopped ⠀ •1 can garbanzo beans⠀ •2 tbsp minced garlic ⠀ •2 tbsp olive oil ⠀ •salt and pepper⠀ •½ c dry quinoa⠀ •1 c water⠀ •1 tsp brown mustard⠀ •1 tsp maple syrup⠀ •1 tbsp red wine vinegar⠀ •½ tbsp balsamic vinegar ⠀ •½ tbsp dried oregano ⠀ directions: ⠀ •preheat oven to 400 and lay down some tin foil ⠀ •place brussel sprouts, onions and garbanzo beans on sheet. drizzle with olive oil. sprinkle salt, pepper and add minced garlic. ⠀ •bake for 30 minutes. toss halfway!⠀ •while veggies are cooking, prepare your quinoa. in a small pot, bring water and quiona to a boil. reduce to a simmer and cook for about 20 minutes. ⠀ •also prepare dressing by whisking together the last 5 ingredients. ⠀ •once veggies are done, toss them in a large bowl. add quinoa and dressing. mix well!⠀ #homecooking #mealprep #recipe #vegan #eathealthy #delishkitchen
