i love mason jars. if you take a mosey around my house, you will see them in use pretty much everywhere. they are just so great. i love using them in the kitchen because they are great for storing things that are maybe a little smelly or will stain. any glass tupperware is great for this actually. if i would've stored this soup in a normal plastic tupperware, we all know if would be red 5ever. ⠀ ⠀ if you are wanting to start your mason jar collection, i do have some life hacks. first, check your local thrift store. i got a box of over 20 random sized and colored mason jars for $3!! i just sanitized them before using! if you are wanting new or need a lot of the same size, check out a crafting store. hobby lobby, michaels and jo anns always have a 40% off coupon and they sell them by the case. anddd if things haven't changed from my good ole hob lob 251 days, glass goes 50% off every other week! ⠀ ⠀ ingredients: ⠀ • olive oil⠀ • half an onion - chopped ⠀ • 2 tbs minced garlic ⠀ • 1/2 c flour ⠀ • 3 c chicken broth ⠀ • 2 c shredded chicken (can be a rotisserie you bought, some you shredded yourself or even canned)⠀ • 1 10oz can red enchilada sauce ⠀ • 1 14oz can black beans - drained and rinsed ⠀ • 1 14oz can diced tomatoes - whole can ⠀ • 1/2 tsp cumin ⠀ • 8 oz shredded cheddar ⠀ ⠀ directions:⠀ • in a large pot, heat your oil over medium high heat and cook your onion. this will take about 5 minutes, you want it to be translucent ⠀ • add your garlic and cook for just a minute⠀ • add in your flour, mix it around really good and cook for another minute ⠀ • slowly add in your broth, make sure all the flour clumps are gone before you add more so you want to be wisking as you pour ⠀ • add chicken, enchilada sauce, beans, tomatoes and cumin and stir ⠀ • reduce heat and cook for about 5 more minutes then add in your cheese and stir until melted! ⠀ ⠀ vegetarian friends, sub chicken broth for veggie broth and double the beans and this will be equally as delish!! ⠀ ⠀ #homecooking #mealprep #soup #masonjars #easyrecipe #delish
