as i type this, i’m ending what i wouldn’t say was my best week ever. my boss was out of town this week, so i spent a large amount of time being alone. don’t get me wrong, i’m a HUGE alone time person, but this week was just hard. on top of that, i’ve been experiencing some sort of allergy to the sun. i get a very nice and extremely itchy, welty, painful and itchy rash. it’s pretty frickin ugly and i feel extremely gross when i look in the mirror and see myself covered in it. food is my coping mechanism. it is my safety blanket. some of my best memories come from sitting around a table with people i love or even strangers enjoying food. while i was home for easter, all my sister wanted for desert was graham cracker / whipped cream sandwiches (frozen) because that is the #1 thing she remembers from our aunt lisa’s growing up. we spent tons of time at our aunt lisa’s (idk why i call it that bc we mostly went to spend time w our cousins and she has a hubby too but we always called it aunt lisa’s house??). she had a pool & was a teacher, so summers were LITTY!! i do remember a lot of the food we ate there, but not at all these sandwiches rylee SWEARS BY!!! so tonight (probs like last week by the time i get around to posting this) i needed some comfort food. i needed some aunt lisa’s, no care in the world, living in my bathing suit, jumpimg on the tramp, comfort food. there were ALWAYS french bread pizzas in my aunt lisa’s freezer. not homemade but frozen personal ones we got to have every once in awhile. so there’s my inspiration for this so hearty & healthy dinner 😉 basically, get a loaf of french bread, some sauce, cheese & toppings and bake. currently, i’m baking mine at 350 but i’m probs gonna broil it a lil so my cheese gets all yummy. as you can see, i’m not using pizza sauce. i always have some sort of pasta sauce in my house, so i just went with it. white sauce would be amazing too. now for the super lame 20 year old ime to come out, if you have a lil family of your own, i imagine this being a super fun friday night dinner. you can get little hoagie buns or just cut up your bread, get lots of toppings & everyone
