i feel shady because when i started this page i was eating so much more vegetarian which resulted in me ‘accidentally’ eating vegan. honestly i am not sure why i’ve been consuming meat more frequently than i used to, but i still do go in spurts of just not wanting nyting to do with meat. the week i meal prepped this was one of those weeks. ⠀ even if you aren’t vegan or vegetarian, this week was so yummy and this recipe is so so easy!! as always, you can adapt these recipeis to what works best for you and your diet ⠀ ingredients ⠀ •large package of sliced mushrooms ⠀ •3 bell peppers ⠀ •one onion ⠀ •taco seasoning ⠀ •minced garlic ⠀ •olive oil⠀ directions ⠀ •line a cookie sheet with tin foil and preheat oven to 350⠀ •slice your peppers and onions ⠀ •spread veggies out on cookie sheet •plop some garlic in there⠀ •drizzle with olive oil and sprinkle with taco seasoning ⠀ •bake for about 25 minutes – check and stir every ten⠀ i served these veggies on top of cauliflower rice i made in the microwave. you could serve them on top of normal rice or on a tortilla. obviously this would make it not vegan, but cheese is always an option!!⠀ #homecooking #mealprep #veganrecpie #vegan #eatyoureggies
