i would like to start off by saying, cooking in a cast iron skillet makes me feel so fancy you guys idk?? i also love these one pot/skillet recipes bc i am so good at dirtying every dish in the house. not that i didn’t still, but idk less big dishes? i ate this as a lunch meal prep. i threw some cauliflower rice and this in a tupperware and called it good! also, i just used microwave cauliflower rice - baby steps! i think this would have been delish w some cheese on top. like it would have knocked it out of the ballpark, but i’m working on my cheese addiction. ingredients: • olive oil • 1 lb ground beef • one big scoop minced garlic • 1/2 an onion chopped • 1 bell pepper chopped • 2 sweet potatoes diced up nice and small • 1/4 c broth • 2 small zucchini diced (zuchs are so small this time of year, if you’re making this while they’re in season and you have a huge one, i’d sat half of it??) • tiny can tomato paste • oregano • crushed red pepper • salt and pepper directions: • over medium-high heat add your olive oil, ground beef, onions, pepper and garlic. cook until beef is browned and onions are translucent. set aside. • in the same pan add your broth, sweet potatoes and zucchini. cook for about 10 minutes (maybe more) until both are tender! i covered mine w a pizza pan to help the cooking lol • add back in your meat mixture, mix in your tomato paste, a sprinkle of oragano, crushed red pepper, salt and pepper. • cook for another five minutes & you’re done!! you could serve this with regular rice or quinoa if you wanted as well! veg friends - this is another recipe that would be just as delish if you just left out the meat!! #homecooking #mealprep #easyrecipe #easycooking #yummy #delish #healthyeating #cleaneating #zuchinni
