not to toot my own horn, but o m g this turned out delicious! the best part about granola is you can add whatever your heart desires - sunflower seeds, chocolate chips, dried fruit, you name it! for a quick & easy breakfast, i throw granola on some greek yogurt. i like buying those big yogurts & portioning it out. it’s cheaper & less plastic/waste! granola is also a great munchie snack. sometimes i just need something crunchy and this is a GREAT alternative to chips! now that i told you my life story, here’s the recipe: •1/2 cup coconut oil (you can use canola or olive too) • 1/2 cup honey • 1/2 teaspoon cinnamon • 1/2 teaspoon salt • 3 cups oats • 1 cup chopped or sliced almonds • 1/2 cup shredded coconut • 1 cup crasins this is exactly what i used for the recipe pictured - feel free to add more or take out what you don’t like or have. follow your heart! • preheat oven to 300° • line a pan with parchment paper (this is SO important! if you don’t do this - you’ll hate doing dishes more than you ever have) • in a small bowl mix your oil, honey, cinnamon & salt • in a large bowl mix your oats, almonds & coconut • pour your liquid mixture over the oat mixture. do this slowly making sure your oats are as evenly coated as possible • spread your mixture evenly on your baking sheet • bake for 30 minutes - mixing every 10 minutes • mix in crasins once you pull granola out of oven your baking time may vary. you are looking for your oats to turn a nice golden brown NOT for it to get to the crunchy granola texture. once you pull the granola out of the oven, it will harden! let it sit for about 20 minutes and store in an airtight container. #homecookimg #breakfast #granola #healthyeating #homemade
