this is one of those recipes that looks to fancy for you to make, but that you are super capable of making. don’t have a zester? me either. i used a cheese grater. no lie.⠀ i like zucchini bread as a snack. i know it isn’t the most healthy thing for you, but i have a super bad sweet tooth and love to snack, so this helps me out a little. ⠀ ingredients:⠀ •1 and ½ c flour⠀ •½ tsp salt⠀ •½ tsp baking powder⠀ •½ tsp baking soda ⠀ •¾ c sugar⠀ •1 lemon ⠀ •½ c oil⠀ •1 c grated zucchini⠀ •1 c powdered sugar⠀ directions:⠀ •preheat oven to 350 and grease a loaf pan⠀ •in a large bowl combine flour, salt, baking soda, and baking powder⠀ •zest your lemon. mix the zest with sugar.⠀ •juice your lemon into a little bowl⠀ •to your lemon sugar, add eggs, oil, 2 tsp lemon juice. stir till smooth. add dry ingredients and stir.⠀ •add zucchini into batter, pour into the loaf pan and bake for 50 minutes. ⠀ •when bread is done, take out of the oven to cool.⠀ •while bread is cooling, make glaze. combine 1 c powdered sugar with 2 tbsp lemon juice. mix thoroughly. if too thick, slowly add more lemon juice. ⠀ •drizzle glaze on bread! ⠀ #homecooking #fancypants #youcandoit #baking #zucchini
