this recipe is being posted in an extremely timely matter due to the many messages and requests for the recipe. it normally takes me a few weeks to get things posted, but for you guys, i have graciously sat in my backyard – along the creek – to write this post for you. ⠀ ⠀ they say breakfast is the most important meal of the day, and high school me was the last person to believe that. now my entire life feels out of whack if i don’t eat breakfast. if i don’t meal prep breakfast, chances are i am going to end up eating something that doesn’t fill me up, starting my day off on the wrong foot. if i don’t eat a good breakfast, i end up snacking and there is a 90% chance those snacks are going to be worse for me than eating a good breakfast. ⠀ ⠀ you can eat this just warmed up as is, or you can pour some milk on top. i have tried both ways and they are equally delicious. the milk obviously brings it back a little bit to that mushy texture i struggle with, but for some reasoning i still love this breakfast prep so much. ⠀ ⠀ i have never dabbled in baked oatmeal before even in the littlest bit, so all of the recipe creds go to @eatingbirdfood. i can now say i am HOOKED on baked oatmeal, so stay tuned for some og recipes. ⠀ ⠀ ingredients:⠀ • 2 c rolled old-fashion oats⠀ • ¼ c maple syrup ⠀ • 1 tsp baking powder⠀ • 1 tsp cinnamon⠀ • ½ tsp salt ⠀ • 2 c almond milk⠀ • 1 egg⠀ • 2 tbs melted coconut oil⠀ • 2 tps vanilla extract⠀ • 2 ripe bananas (1 mashed / 1 sliced)⠀ • 1 ½ c quartered strawberries ⠀ • ¼ c choc chips⠀ ⠀ directions:⠀ • preheat oven to 375 and spray an 8x8 dish⠀ • in a large bowl, mix oats, baking powder, cinnamon & salt.⠀ • add in milk, syrup, eqq, coconut oil, vanilla and mashed banana. mix well. ⠀ • v softly, add 1 c strawberries, half your banana and 1/8 c choc chips.⠀ • pour into dish and beautifully top with the rest of your fruits and choc chips ⠀ • bake for 50-60 minutes. you are look for the middle to be set (not jiggly) and the edges to be a golden brown. ⠀ #homecooking #mealprep #breakfast #healthyeating #oatmeal #eatyourfruits
