as i write this, i feel that i may be starving to death. no to be dramatic, but when i don’t eat a good breakfast i really feel it. i also end up eating what feels like a million snacks, when i could’ve just started my day off with a good hearty meal.⠀ most of the time i don’t eat breakfast because i don’t have the time. i never cook myself breakfast every morning. i just grab my tupperware out of the fridge, heat it up, and im good to go. if im running super late, i’ll even just bring it to breakfast and eat it there.⠀ yes, it took some time out on my life on the Sunday that i made this to make it, but 100% worth it!! ⠀ ingredients:⠀ •10 eggs ⠀ •¾ c of milk⠀ •¼ c real bacon bits ⠀ •1 yellow squash chopped ⠀ •½ a white onion – diced ⠀ •2 tbsp minced garlic ⠀ •½ a package of mushrooms ⠀ •1 head of broccoli – chopped ⠀ •2 tsp thyme ⠀ •2 cups spinach ⠀ •salt and pepper ⠀ directions:⠀ •preheat oven to 400 and grease a 8x8 pan⠀ •cover the bottom of the pan with half your spinach⠀ •in a large skillet, saute onions, squash, mushrooms, broccoli, garlic and thyme. cook until veggies are tender. you will be looking for your squash and onions to look a little more translucent and your mushrooms and broccoli to be softer to touch. ⠀ •spread the veggies on top of spinach. sprinkle bacon bits on top. add the rest of your spinach.⠀ •in a bowl, mix eggs, milk and some salt and pepper. ⠀ •pour mixture on top of veggies (add cheese on top here if wanted)⠀ •bake for 50 minutes! ⠀ #homecooking #breakfast #healthyeating #mealprep #mealprepping
