you guys, egg cups are the easiest meal prep you could possibly do! you can change up the veggies and meat to be whatever you’d like and make it so you don’t get sick of them! these ones right here are zucchini, roasted red pepper and onion. they have no cheese or meat, but you could add both! ingredients: • 10 eggs • 1/2 c milk • 1/2 an onion chopped • 1/2 c chopped roasted red pepper • 2 c shredded zucchini • salt and pepper directions: • preheat oven to 375° • if not using liners - spray pan very very well • mix eggs & milk, add salt and pepper • in a seperate bowl, mix all your veggies • fill tin about 1/2 way full with veggies, then top with egg mixture. i used a 1/3 c to add egg & it worked super well! • bake for about 30 minutes or until they aren’t runny #homecooking #breakfast #mealprep #eggcups #healthyeating
