to be completely honest, this was pretty much a ‘pinterest fail’. i have been seeing these cute egg cups everywhere and i was like ok i’m gonna make them. how hard can it be??⁣ my boujee muffin pan was wayyyy to big for the ham slices i got, so 6 of them were just this weird egg/ham pile. then, even in my mini muffin tin the egg leaked through the ham so 1. not cute in my tupperware 2. literally the worst to clean up. maybe use thicker ham??? ⁣ i’m still going to post the recipe because they are super yummy & i love quick reheat breakfasts! ⁣ ingredients: ⁣ •sliced ham (12-18 pieces??)⁣ • 7 eggs (weird number but it felt right ok)⁣ • 2 egg whites ⁣ • 1/4 c milk ⁣ • handful chopped spinach (1/2 c sounds good) ⁣ • 1/2 c shred cheese ⁣ • salt & pepper ⁣ directions:⁣ • preheat over to 350°⁣ • grease your muffin pans (full size apparently works for everyone else - i used mini) ⁣ • chop up a few extra slices of ham (however meaty you’re feelin)⁣ • mix your eggs, milk, salt & pepper ⁣ • add spinach & ham ⁣ • line muffin pan w ham (such a weird sentence) ⁣ • scoop egg mixture in (i used a 1/4 c measure cup, it wasn’t the cleanest step in the world but it worked) ⁣ • bake for 20-25 minutes - until eggs aren’t liquid ⁣ i hope you have better luck than me lol. at least i got a cute pic for the gram! buy some extra ham just in case and don’t get too frustrated lol i did! ⁣ #homecooking #mealprep #breakfast #eggcups #pinterestfail #ibelieveinyou
