yep, you read that right. comin’ at you with ANOTHER baby step!! today we are talking about spaghetti squash. the no carb trend is obviously a trend with zucchini noodles, cauliflower rice, allll that stuff. i tried to hop on the bus last fall when i bought this squash at the farmers market, but i was not impressed. i cooked the whole squash and saved half, and i FINALLY thawed out the other half and gave it a go.⠀ what i learned with spaghetti squash is you almost need to over season it. you also want to use almost spicy seasonings to kind of cancel out that super sweet taste of the squash! i’m not a huge red sauce fan, but i think i would recommend a red sauce with this over using a white! ⠀ for mine, i just a little olive oil. my squash was already baked. i warmed up some olive oil in a pan with a few scoops of minced garlic. then i threw in the spaghetti squash, salt, pepper and red pepper flakes. all i did was sautée everything until it got warm. ⠀ i made this as a side dish, but loved it sooooo much that i ended up running out by the end of the week! i challenge you to give spaghetti squash a try (maybe a little closer to fall when they’re more in season). ⠀ #homecooking #healthyeating #mealplanning #eatyourveggies #spaghettisquash #babysteps
