guys this recipe is so easy & delicious! you make it all in one pot & it takes maybe 10 minutes. this is a great summer recipe (or winter?? thx mother nature) because you can eat it cold & it’s full of veggies! i know people are super anti pasta & anti carbs. personally, i don’t think meal prepping this is going to kill you. it is just as much veggies as it is pasta. treat yourself. life is too short to eat too boring. ingredients: • bag of frozen ravioli • jar of pesto • bunch of asparagus (around a pound - cut into thirds) • 2 tomatoes (chopped) • 2 med zucchini (cubed) (if it’s summer just like one - i probably used about 4 cups of cubed) • parmesan cheese directions: • boil a pot of water • while waiting for water to boil, do all your veggie chopping. put your tomatoes in a big mixing bowl and keep the zucchini and asparagus to cook. • cook ravioli for about 5 minutes (just a tiny bit less than done) • add asparagus and zucchini and cook for about 3 minutes. you want them to soften a little. • drain and add to mixing bowl • add entire jar of pesto and however much cheese you deserve & stir this recipe can be served hot or cold. in the summer i really like cold lunches and pasta salad is one of my favorite things to eat! #homecooking #mealprep #easycooking
